Put breadcrumbs in a large bowl&lt;br /&gt;

Cook onion, salt, butter, ginger, sage, celery together until light brown.&lt;br /&gt;

Add chicken stock, mix, simmer five minutes.&lt;br /&gt;
&lt;br /&gt;
Sprinkle salt, pepper, oregano, paprika, allspice on skin.&lt;br /&gt;
&lt;br /&gt;
Stuff turkey and bake at 325, covered.  Pour water or stock on bottom of pan to keep from burning.  Baste regularly.&lt;br /&gt;
&lt;br /&gt;
3 1/2 hours for 5-7 kg.&lt;br /&gt;
&lt;br /&gt;
When almost cooked remove covering to brown.  Done when a meat thermometer reads 180 degrees.&lt;br /&gt;
