Roasted Turkey

Ingredients

  * A turkey
  * 1/2 cup breadcrumbs
  * 1 small diced onion
  * 1/2 tsp salt
  * 1/4 cup butter
  * 1/8 tsp ginger
  * 1/4 tsp black pepper
  * 1 1/2 tsp sage or savory
  * 1/2 cup celery or fennel
  * 1/2 cup chicken stock

Directions

Put breadcrumbs in a large bowl

Cook onion, salt, butter, ginger, sage, celery together until light brown.

Add chicken stock, mix, simmer five minutes.

Sprinkle salt, pepper, oregano, paprika, allspice on skin.

Stuff turkey and bake at 325, covered. Pour water or stock on bottom of pan to keep from burning. Baste regularly.

3 1/2 hours for 5-7 kg.

When almost cooked remove covering to brown. Done when a meat thermometer reads 165 degrees.

Gravy

Ingredients

  * 3 tblps flour
  * 3 tblps water
  * 1 small onion, diced
  * soya sauce
  * worceshire sauce
  

Directions

Add all ingredients to pan drippings. Boil until thickened.
