From Diana Rattray,Your Guide to Southern U.S. Cuisine. This pork chop recipe includes onion, lemon, chili powder, brown sugar, ketchup, and vinegar.

INGREDIENTS:

   * 2 cups water
   * 1 lemon (juice and grated rind)
   * 1 onion, finely chopped
   * 1 teaspoon salt
   * 1/4 cup Worcestershire sauce
   * few drops Tabasco sauce
   * 2 ribs celery, chopped
   * 1 teaspoon chili powder
   * 1/4 cup brown sugar
   * 1 cup ketchup
   * 1/4 cup vinegar
   * 1 1/2 to 2 lbs pork chops

PREPARATION: Mix all ingredients, except pork, in a 2-quart saucepan. Bring to a boil and simmer for 10 to 15 minutes. Brown chops; place in a baking dish. Cover with sauce; bake for 1 1/2 to 2 hours at 350 degrees. Serves 6.
