Ingredients

  * 1 lb 8 oz sweet potatoes, chopped
  * 3 tbsp butter
  * 1 clove garlic, crushed
  * 2 tsp grated fresh ginger
  * 1 1/2 tbsp chopped fresh cilantro leaves
  * 2 tsp soy sauce

Directions

1. Bring a large saucepan of lightly salted water to a boil. Add the sweet potatoes and cook for 10-15 minutes or until tender. Drain well.

2. Melt butter in a small saucepan, add garlic and ginger and cook over low heat, stirring for 1 minute or until fragrant.

3. Mash sweet potatoes until almost smooth, stir in garlic mixture, cilantro and soy sauce.
